How to make
Dough : 1 egg,12 tbs milk,12 tbs sugar,12 tbs oil,1tsp baking soda, 350-400 gr flour, grated peel from 1 lemon. Stir well all together and dived the dough in 4 balls,then roll out 4 sheets(30cm x40cm).Grease with 1 tsp of oil the back of the baking try(30x40cm). Bake for 3-4 mins,each sheet on to the back of the baking try, into the oven at 160 C.
Filling 1 : 900 ml milk, 135 gr lemon jelly,5 tbs sugar,5 tbsp flour,150 gr unsalted butter,lemon zest from 3 lemons.
In a saucepan,warm the milk over low heat,add the sugar,flour and lemon jelly and whisk together until the mixture is completely smooth,continue stirring for 2 - 3mins.Remove from the heat ,allow to cool at room temperature and stir in the lemon zest and the butter.
Filling 2 : 8 tbs strawberry jam.
Lay in to the baking try the first sheet and spread over 4 tbs of strawberry jam,add the second sheet and pour over all the filling 1,add the third sheet,spread over 4 tbs of strawberry jam,add the fourth sheet,cover with wrapping film and allow to cool in to the fridge for 3 hours.
Decorate with icing.
